Human Rights Project:  Students were presented with the 30 articles of the United Nation's Universal Declaration of Human Rights.  Each student was assigned one of the 30 articles. They illustrated that article on a poster board without using words - only pictures. They could use the # of their article in an artistic way. Students also needed to write an essay describing their article and also give examples of how it is obeyed (or not) by the US and in one other specific country. The students also presented this to the class and we discussed the very important issue of human rights around the world.
